Decorative ornamental corn should not be eaten. There are many kinds that vary in ear size, kernel color, husk, and stalk color. Ivory and purple are two of the most common husk colors.
Ornamental corn is widely used for fall decorating and creative crafts such as centerpieces, wreaths, and displays. Shuck back the ears to expose the colorful kernels. Tie husks into bunches and blend with bundles of wheat. Dried kernels may be ground to make corn meal.
Ornamental corn will freely cross-pollinate with other types of corn, such as field and sweet corn, making isolation a necessary component of successful growing. Once the husk begins to dry, the ears can be harvested however they should be left to dry for another full week before use.
