Firm and heavy for its size, turban squash is a striking bright orange, trimmed in a dark ivy green color. Bake, roast, steam, sautee, or puree this squash.
Resembling a Chinese lantern, the gooseberry is wrapped in a thin, papery, inflated skin. These very tart, piquant fruits turn from a pale green to an amber or gold color as they ripen and offer a flavor similar to a gooseberry or a tart green grape.

Orange cauliflower is generally available year round.
The orange color in this cauliflower is a result of a genetic mutation, which allows the vegetable to hold more beta carotene, or Vitamin A. Orange cauliflower is also known as Cheddar cauliflower and Orange Bouquet cauliflower.
Despite its unique color, Orange cauliflower demonstrates the same characteristics as White cauliflower in terms of texture and flavor. The plant is made up of tightly packed clusters of florets, known as the "curd”. Its flavor is mild with subtle cruciferous and nutty sweet nuances, a taste which is amplified when roasted. The entire cauliflower, its leaves, trunk, stems and florets are all edible.
Orange cauliflower contains a fair amount of folate, calcium, potassium and selenium and is high in both fiber and vitamin C. It also contains a higher amount of Vitamin A than traditional Cauliflower.
Orange cauliflower lends itself to any traditional cauliflower recipe. It can be steamed, roasted, fried and pickled. Puree boiled or steamed Orange cauliflower and add to soups, sauces and casseroles. Its flavor pairs well with cardamom, cumin, curry, garlic, robust cheeses, brussels sprouts and onion. Use within a few days of purchasing and rinse immediately before use.
The first Orange cauliflower was discovered in 1970 in the Bradford Marsh just north of Toronto. This cauliflower hybrid was developed in 1981 by breeder, Michael Dickson at the New York State Agricultural Station in Geneva, part of Cornell University. Development was tricky, partly because cauliflower hadn't been developed as a hybrid before. Using conventional methods, Dickson crossbred the orange cauliflower with selected successive generations of white cauliflower until he had a large market friendly variety.
