The tomato vine contains nutrients and continues to feed the fruit while they are ripening in cases or on the shelf. Other varieties are picked green and ripened with a poly ethylene gas which reduces the natural sugar content and sometimes results in a more mealy texture.
Description/Taste
On the Vine Tomatoes are marketed and sold stem-on, with four or five tomatoes to each vine. As they are allowed to ripen to a later stage of maturity, they have a higher sugar content, are uniformly bright orange, and medium-sized.
Nutritional Value
Tomatoes offer vitamin A, vitamin C, folate, potassium and dietary fiber. Containing up to 94 percent water, tomatoes are low in calories.
Applications
On the Vine tomatoes are ideal for display and uniform slices. Use in fresh preparations; pair with fresh cow's milk cheeses, basil, oregano, melons, bread, pasta summer squash, eggplant and peppers. Add to fruit and vegetable platters. Store at room temperature on the vine until ready to use.
