Nasturtiums, Tropaeolum majus, are a flowering annual in the Tropaeolaceae family. Also known as Indian cress and Peruvian cress nasturtiums are popular today both as a garden flower and an edible plant.
Nasturtiums work well in a variety of savory preparations. Use as an edible garnish in green, grain and pasta salads. Add to sandwiches and quesadillas or puree to make a nasturtium pesto. Use in lieu of squash blossoms and serve nasturtiums stuffed with cream cheese and herbs. Both the buds and seeds of the nasturtium plant are edible and commonly pickled yielding a flavor and texture similar to capers.
Native to South America nasturtiums have long been enjoyed for their culinary attributes. Their name comes form the Latin word tropaeum, meaning trophy. Nasturtiums were introduced to Spain in the 1550’s via Spanish conquistadors who sent them back to Spain when they noted the Incans using them as a food source.
