Description/Taste
Money bean pods are yellowish-green with pink speckles and a hard fibrous texture. The outer inedible shells house 5 to 6 creamy colored, kidney shaped beans. They are mottled with maroon and pink spots when fresh and have a slightly darker appearance when dried. They are an excellent shelling bean for applications in soups or baked dishes such as cassoulets.

Money beans are available in the summer and fall.
