Description/Taste
Micro Brussels sprouts range in size from pea-sized to grape-sized. These Brussels sprouts are a smaller version of mature Brussels sprouts, simply picked at an earlier stage of growth. They are milder and sweeter in flavor compared to mature Brussels sprouts.
Applications
Blanche micro Brussels sprouts whole, the pan-roast until browned and caramelized, toss in a vinaigrette and serve with baby vegetables. Stir-fry minced garlic and ginger in a wok, then add micro Brussels sprouts and hoisin sauce, fry briefly and serve as a side. Combine whole micro Brussels sprouts with melted butter, Worcestershire, sugar and salt then roast until browned and glazed. Micro Brussels sprouts will keep, refrigerated, for up to a week.
