Yellow corn is a variety of sweet corn. Its ears are wrapped in tightly bound lime hued husks with silks and a tassel that extend out from the tip. The yellow kernels are packed in tight almost uniform rows.

Description/Taste
The Lemon cucumber is a spherical, round to oval-shaped broad fruit that grows two to three inches in length. The small to medium sized fruit often has a protrusion at the blossom end, somewhat like a navel orange. Changing color as it matures, its early, light green to lemon-yellow color turns a golden yellow as it ripens. The mild, pleasant taste is complemented by a cool, crisp texture. Resembling a lemon in appearance, the flavor is more delicately sweet and less acidic than the common green cucumber. Similar to a kiwi, Lemon cucumber skin has tiny bristles that are edible but may be easily removed.

Lemon cucumbers are great for slicing, pickling, and are burpless, meaning they lack bitter flavor components.
Applications
Lemon cucumbers are most often used in raw preparations but may also be cooked or pickled. Use in fresh green salads, or juice into cocktails, agua frescas and smoothies. Pair with tomatoes, summer squash, carrots, other cucumber varieties, fresh herbs and cheeses, citrus, olives, vinegar. Rinse thoroughly and seed if desired. Rub with a dry kitchen towel to remove bristles.
Geography/History
The Lemon cucumber is believed to have been introduced to the United States in the early 1900s. However, there are texts that originated in the Middle East as early as the 16th century. It retains a strong modern market presence in India where it is added to soup, Daal, used in making Dosa-Aavakaaya, and chutney.
