A Leek scape is a long slender flower stalk that grows amidst the aromatic leeks. Towards the end of the stalk the scape forms a light green colored bulb that tapers to a thin end. If left to bloom, the top of the scape becomes a large pom-pom of a flower with seeds that can be harvested, dried and used to plant new Leeks. Leek scapes offer a mild leek aroma and a similar mild oniony flavor, with a texture similar to asparagus.

The scapes, or flower stalks of Allium ampeloprasum appear in the late spring and provide a once-a-year opportunity for cooks and culinarians alike. Harvested before the flower blooms, the tender Leek scapes can be snapped off like the stalks of asparagus, leaving the remainder of the plant to focus on producing hearty late-summer Leeks.
Leek scapes can be used to impart a subtle Leek or onion flavor to many dishes. The tender Leek stalks are preferred, because the tougher stalks will remain tough after cooking. Cut Leek scapes diagonally and add to soups and stir fries. Leek scapes can be pickled for preservation, along with any type of spice or herbs for a variety of flavors. Sautee the scapes with olive oil and serve alongside meats or fish. With a texture similar to asparagus, Leek scapes can be prepared in much the same way as the smaller green stalks; toss in olive oil and roast or chop and sauté. Leek scapes may also be eaten raw, added to salads or cold pasta dishes.
Leeks are native to the area that ranges from Southern Europe to Western Asia and south to Egypt. Leeks grow well in cooler summer temperatures, but can tolerate the heat of a Mediterranean climate. Leek scapes appear generally in the second year after an initial planting. If grown as an annual, Leeks do not grow scapes. Most often, Leek scapes can be found at local farmers markets.
