Orange Honeydew Melon
Oval-to-round and a delicious cross between a cantaloupe and a honeydew, the very fleshy juicy orangish-yellow pulp of the orange honeydew melon is encased in a hard very yellow matching rind.
Iceberg Lettuce
It is the only lettuce type that does not occur in red form as well as green. Iceberg is the given name to dozens of cultivars of lettuce, all of which are adapted to specific planting regions and time periods.
Seasons/Availability
Although Yellow bell peppers are available throughout the year, they are at their peak during the months of August and September.
Current Facts
There are several varieties of Yellow bell peppers that are grown specifically to produce and harvest them in their yellow stage of maturity, as temperatures during coloring play a major role in the uniformity and rate of color development. These varieties include Golden Belle, Golden Cal Wonder, Astro, Klondike Bell, Honey Bell and Marengo.
Description/Taste
Yellow bell peppers are large, growing up to four inches long and wide. They are thick and smooth-skinned with three to four lobes, with a blocky, "bell" shape. Their flesh is crisp with a mild, sweet and non-pungent flavor.
Applications
Yellow bell peppers can be prepared raw, cooked, roasted or pickled. Slice peppers and layer with squash and tomato, then bake into a gratin. Roast, peel and de-seed, then add to grilled sandwiches or green salads. Finely dice and combine with diced onions and black beans for a side salad. Puree roasted Yellow peppers with garbanzo beans and tahini for a flavored hummus. Add diced peppers to frittata. Saute peppers with onions and pork, cover with vegetable stock and cook down into stew. During the cooking process, the skin of a bell pepper will separate from the flesh. Yellow bell peppers will keep refrigerated, for 1-2 weeks.
Geography/History
Bell peppers are a self-pollinating botanical fruit (not a vegetable) native to Mexico, Central and South America. They are a member of the Capsicum annuum family, the best known domesticated species of "peppers" in the world, though they are not a pepper as their name suggests. Bell peppers are a warm-season crop that need a long season for maximum production.
