The King Oyster mushroom AKA Royal Trumpet Mushroom is a common edible fruit body of the fungus botanically classified as Pleurotus eryngii. Often "oyster" is a term that defines a single mushroom on the market. However, there are many wild and cultivated species which have significant differences in growth habitat, appearance, texture and flavor. The King Trumpet oyster mushroom is also called abalone and shellfish mushroom, though it should not be confused with these other given names.
Description/Taste
King Trumpet Oyster mushrooms are unique in appearance to other mushrooms. They are easily identified by their thick cylindric stemmed creamy white bowling pin shape with a stout sandy colored brown cap. The stem and cap are wholly joined by thin gills on the caps underside, a unique feature of the King Trumpet. Raw King Trumpets, though dense and spongy in texture lack aroma or flavor. Cooking brings out a savory umami flavor in the mushroom while softening the texture to a meaty and melting quality.
Applications
King Trumpet Oyster mushrooms pair well with legumes, grains, seafood and white meats. The King Trumpet Oyster mushroom's meaty texture lends well to frying, stir-frys, soups and braising. Complementary flavors include Asian greens, ginger, chiles, pot herbs, peppercorn, soy, garlic, vinegar and dry white wines. As they are etremely perishable, use King Trumpet Oyster mushrooms as soon as possible for optimum flavor and quality. Do not wash mushrooms until just before use. Store, refrigerated in brown paper bag. Never store in plastic as all mushrooms deteriorate rapidly in plastic.
Geography/History
Wild King Oyster mushrooms are native to Mediterranean regions of Europe, North Africa and the Middle East. King Oyster mushrooms are unique to most mushrooms as they are resistant to extreme environmental conditions such as the hot dry desert conditions of North Africa. They are also unique in their parasitic preferences. They feed off of the roots of herbaceous plants. They are an extremely rare wild commodity, though they have been identified growing wild in various parts of North Africa, Central and Northern Asia. In domesticated cultivation King Trumpet Oyster mushrooms are grown organically in a culture composed of agricultural waste, such as sawdust and straw supplemented with cottonseed meal and grain bi-products. The mushrooms are grown in a climate-controlled dark environment and hand harvested. The substrate that is left behind is used as compost or as nutritious food source for local livestock. King Oyster mushrooms can be harvested fresh and dried to yield year round availability.
