The contrast between the white flower and the green stalk is beautiful, giving the Karifurore cauliflower the look of a flower. The green stalk is actually more flavorful than the white flower; it is also sweeter than commonly known cauliflower.

Cauliflower is in the Brassicaceae family and Karifurore is a cauliflower and broccoli hybrid. Karifurore cauliflower was created by the TOKITA SEED CO.,LTD in Japan. Karifurore is not widely available outside of Japan due to it's newness to the market, however Japanese chefs value the aesthetic appeal and taste. Karifurore is also known as stick cauliflower in Japan and Fioretto cauliflower in the United States. Karifurore was up for a Fruit Logistica Innovation Award in 2014.
Karifurore cauliflower is high in vitamin C, dietary fiber and potassium. In addition it has properties that can prevent cancer, high blood pressure and heart disease; it also has anti-aging properties.
When a bunch of Karifurore cauliflower is open slightly like a flower, it is ready to be harvested. It can be eaten raw, gently steamed, flash fried, or pan-seared. When cooked the stems turn to a brighter shade of green. Karifurore boasts a slightly softer texture, and sweeter flavor becoming a quick addition to almost any dish. When refrigerated, it can be stored for up to a week.
The idea of Karifurore cauliflower came from an employee at Tokita Seed Company. The aim was to grow a cauliflower that had a small amount of stem and a more appealing flavor. The resulting Karifuore cauliflower created a more efficient product for distribution and consumption in the Japanese market. The lighter weight vegetable helped defray the waste and logistics cost of a limited island distribution system.
Karifuore cauliflower was developed by Tokita Seed Company and introduced into stores around 2012. Tokita Seed Company is a leader in crop innovation with headquarters in Japan, with auxiliary research offices in the United States, India, and Italy. Karifuore is relatively quick to maturity once sown, and flourishes in full sun conditions and cool, moist soil. Unlike traditional cauliflower varieties, Karifuore is harvested in a bouquet style without so wasting the sweet, edible stalk.
