Description/Taste
Smaller in size than a Western lime, with a characteristic neck on the stem end, Kaffir limes are encased in a pebbly skin. The peel of this dark, green fruit is heavy with aromatic oils. The kaffir lime's extremely intense and distinct fragrance cannot easily be substituted by other spices. Seldom used in cooking, the very sour juice releases the same aroma as the leaves.
Applications
Kaffir limes can be grated, zested, juice or used whole. The leaves of the Kaffir lime tree are also used in cooking and as an aromatic.

South East Asian countries use the kaffir lime to cleanse the hair and scalp.
