Many commercial varieties of carrots are actually not breed for flavor rather for their ability to withstand shipping conditions, disease and machine-level harvesting methods.
Description/Taste
Jumbo Yellow carrots are varieties that are grown specifically to yield sweeter flavor at maturity while also retaining healthy texture; ie: the taproot is not woody or fiberous. These carrots are similar to the Nantes varieties, having both round shoulders and a blunt non-tapered tip. They have a firm and crunchy texture with an earthy sweet flavor.
Nutritional Value
Yellow carrots accumulate xanthophylls, pigments similar to beta-carotene that support good eye health as they are absorbed as Vitamin A in the body.
Applications
