Cipollini onions have petite, saucer shaped bulbs that vary from 1-3 inches in diameter. They have pale yellow and gold colored thin, papery skin with translucent white flesh. In their raw state, Cipollini onions are firm and semi-sweet with a pungent flavor and mild aroma. Once cooked, they sweeten and soften dramatically.

Cipollini onions, botanically known as Allium cepa Borettana, are an Italian heirloom variety. Cipollini onions are also sometimes refereed to as Borettana onions, after their originating town of Boretto, Italy. The name Cipollini translates from Italian to "little onion". Common Cipollini onion varieties are Gold Princess, Flat of Italy, Bianca di Maggio and Noordhollandse Bloedrode. They can be distinguished by three colors: white, yellow and red.
Use Cipollini onions whole to highlight their small size and unique shape. A quick blanch in boiling water and then an ice bath will help to loosen the thin papery skin for easier removal. The high sugar content of the Cipollini onion makes for easy and flavorful caramelizing, perfect for utilization in stews, roasts or added into casseroles. The Cipollini onions size makes it a good pickling option.
The Cipollini onion originates in the Reggio Emilia province of Italy, an area also known for "Prosciutto of Parma” ham and “Parmigiano Reggiano”.
Cipollini onions were originally cultivated in Boretto, Italy in the 1400's. Originally grown only for domestic distribution, the Cipollini onion traveled across Europe and subsequently to America with Italian immigrants. Cipollini onions are now grown around the globe in regions where the climate matches that of its origin.
