Maui Onions
Two characteristics set the Maui onion apart from other yellow onions: the high sugar and high moisture content of its flesh.
White Corn
White corn is a sweet corn variety. Its ears are wrapped in tightly layered pale lime green to white husks. One ear of corn can contain up to 400 kernels growing in rows lengthwise.
Huckleberries are available year round in frozen form. Their availability in fresh form is limited to summer months.
Current Facts
Gaylussacia baccata, the black huckleberry, is the most popular species of this berry. Some blueberries are mistakenly called huckleberries, the difference being that huckleberries have pits. Huckleberry varieties include the red huckleberry, southern cranberry, the squaw huckleberry, and the California huckleberry.
Description/Taste
Huckleberries are an American berry variety, similar in size and appearance to a blueberry. Huckleberries have dark, purple-black skin and flesh and contain seeds. They have a floral, sweet-tart flavor and aroma.
Applications
Huckleberries may be used fresh, but are most commonly found in frozen form, and well suited to cooked or baked preparations. Add to muffin, cake, fritter or pancake batter. Pair with nuts, fresh herbs, maple syrup, cinnamon, buttermilk and citrus zest. Cook down with sugar and lemon juice, strain out the juice to make pancake syrup and use the pulp to make spiced huckleberry butter. If frozen, keep tightly wrapped in the freezer until ready to use. If fresh, refrigerate and rinse gently before using.
Ethnic/Cultural Info
The huckleberry's name was made familiar by Mark Twain's well-known book "Huckleberry Finn".
Geography/History
The name of this berry is a corruption of "hurtleberry", a type of whortleberry, applied to bilberries or blueberries. The two plants grow in the same regions and are used in similar ways. The fruit of the huckleberry, however, has a different structure. Not a true berry, the huckleberry is a "drupe", a fruit with a hard pit.
