Wild arugula AKA rocket, of the species Brassica Eruca sativa, is a relative of cultivated arugula. It is a fast-growing, cool season annual that produces flowers during high temperatures and under during long days. Sequential planting can produce multiple harvests and delay flowering.
Description/Taste
Long thin, jagged deeply lobed leaves distinguish wild arugula from standard arugula. Its leaves are also deeper in color, more pungent, peppery and intense. The stem color ranges from green to purple. This can be determined by variety, region and seasonal growing.
Applications
Use wild arugula as an herb or a salad green. It has a more peppery flavor than baby arugula, and can be wilted, cooked or eaten raw. Add wild arugula leaves to hot, cooked pasta, toss with parmesan cheese and mix until arugula is wilted. Combine wild arugula, shaved manchego, marcona almonds and a quince membrillo dressing for a Spanish salad. Puree wild arugula with garlic, pine nuts, pecorino and olive oil until combine then spread pesto on sandwiches or fresh pasta. Use herb arugula within a week of purchase and keep dry and refrigerated.
Ethnic/Cultural Info
Wild arugula's European name, rocket may be derived from the rocket-like explosion that occurs in one's mouth upon eating it, however in America it got its name, arugula as Italians who immigrated to America referred to it as rucola. It is still known as both rucola and rocket today.
