
White Corn
White corn is a sweet corn variety. Its ears are wrapped in tightly layered pale lime green to white husks. One ear of corn can contain up to 400 kernels growing in rows lengthwise.
Rainbow Swiss Chard
Rainbow chard, also known a 5-color silverbeet, is a tender chard variety with multi-colored stalks of yellow, white, orange pink and red.
Grown in the northern part and other regions of California, Cherokee Tomato season is June to November.
Description/Taste
The Cherokee tomato has a distinctive dusty rose color with a hint of purple, topped by green "shoulders." Either round or oblong-shaped, these tomatoes offer a rich tomato flavor with low-acid and a subtle smoky flavor. The Cherokee tomato has a soft texture similar to that of a beefsteak tomato.
Nutritional Value
Low in calories and cholesterol-free, Cherokee tomatoes are rich in vitamin C, contain potassium and provide some folate and fiber.
Applications
Cherokee tomatoes are a delicious substitute for beefsteak, vine-ripened or hydroponic tomatoes. Fresh tomato slices add flavor to hamburgers and sandwiches. Toss chunks in mixed green salads; drizzle with a favorite dressing or vinaigrette. Stuff with meat or rice for a delicious main entrée. Ideal for tomato sauces and purees. Slices make an attractive edible garnish. Create a tomato relish using fresh basil, chopped red onion, diced jalapeno, minced garlic, and a splash of balsamic vinegar.
Geography/History
Cherokees are a 100-year-old heirloom, whose seeds were first shared with settlers in what is now Tennessee by the local Cherokee Indians. This Tennessee variety is said to have started the dark tomato craze.
