Green Dragon apples resemble a lime green Golden Delicious dotted with very small brown freckles. The skin is thinner than most green apples, yet also resistant to bruising. The interior reveals a white, crisp-textured flesh. The Green Dragon is a very sweet, low-acid apple that contains a plentitude of chemicals known as fruit esters, making it one of most aromatic apples on the market. Its flavor imparts layers of tropical undertones such as pineapple along with even sweeter flavors reminiscent of pears. The Green Dragon has almost no discernible tartness.

Green Dragon apples are a Japanese variety of Malus domestica. The Green Dragon is a cross between the Golden Delicious and Indo apple, meaning it shares the same parentage as the Mutsu apple. The name Green Dragon is said to be a reference to the Chinese symbol for royalty.
Apples are a healthy and delicious part of the diet. One apple contains approximately a fifth of the daily recommended amount of dietary fiber, as well as Vitamin C, potassium, and phytochemicals. They have limited amounts of fat, sodium, and cholesterol.
The complex sweetness of the Green Dragon apple shines in both cooked and raw preparations. Serve fresh in chopped and fruit salads, or add grated or roughly chopped Green Dragon apple to batter for pancakes, muffins, and fritters. Similar to Golden Delicious, sliced Green Dragon apple makes an excellent filling for pies and tarts. Its flavor pairs well with cranberry, pear, strawberry, Manchego cheese, and cinnamon. Kept in the refrigerator, Green Dragons last for two to three weeks.

Green Dragons initially encountered a stumbling block on the market since they are naturally covered with small brown freckles, which some consumers mistook for blemishes. Now, some Green Dragon apples are labeled with a sticker letting customers know that the freckles are a natural part of the apple’s skin.
The Green Dragon apple was developed in 1920 at the Aomori Research Institute in Japan. Grown in the American Pacific Northwest originally, it was harvested almost exclusively for export to Japan. Today it can be found during harvest season at select farmers markets and from purveyors of specialty produce.
