Wasabi
Wasabi is a perennial and a member of the Cruciferae family. It is grown mainly for its underground rhizome (tuber) which produces branch-less, edible leaves above ground. A mature wasabi root is firm, cylindrical, brown and green-skinned and tapered.
Green Shishito Chile Peppers
Japanese peppers are mildly spicy and most often prepared cooked. Saute peppers in olive oil, over high heat, until they just begin to blister- serve hot, sprinkled with sea salt.

The Garnet yam is, in fact, not a yam. It is a sweet potato that lost its identity to an American labeling system that forced the naming of yellow-orange fleshed sweet potatoes to include yam in their identification. The garnet yam "sweet potato" is a member of the Convolvulaceae family along with other herbaceous perennial vines, trees and shrubs. It is the storage organ of the plant, storing nutrients and carbohydrates which sustain its above ground shoots, vines, foliage and flowers.
Description/Taste
Garnet yams are slender, ovate and cylindric in shape, tapering at the ends. They have a rough semi thick skin with a pale salmon color. The flesh is golden orange, moist and starchy. The flesh's color turns a vibrant golden yellow cooked. Its flavor is sweet and its starchy textures allows it to absorb accompanying ingredients' flavors.
Nutritional Value
The Garnet yam is a rich source for protein, carbohydrates, vitamin A, vitamin C, thiamine, niacin and potassium.
Applications
The high sugar and starch content of garnet yams make them suitable for a wide range of both sweet and savory applications, and many cooking methods. Serve them mashed winter squash, baked into a pie, pureed in a soup, or simply baked on their own and stuffed with roasted veggies, meat or cheese. Both the oven or the deep fryer make for equally delicious french fries, far more nutritious than those made with white potatoes.
Geography/History
True yams are native to Asia and Africa. There are about 200 varieties of yams, none of which are grown in mainland United States. Sweet potatoes are native to the New World, specifically Peru and Ecuador. The Garnet variety is one of the most common sweet potatoes cultivated for American markets. Along with the Beauregard sweet potato, these two varieties account for about ninety percent of the sweet potatoes produced in the United States.
