There are two classifications of garlic: softneck and hardneck. Garlic whistles, also known as garlic scapes, only form on hardneck garlic varieties. The whistles contain an "umbel". Encapsulated inside that umbel are numerous bubils (miniature bulbs) and flowers. When garlic from the previous season is very to close to maturity, garlic whistles occur. If not harvested, they eventually form seed heads. When left to seed it causes the stalk to become tough and woody, leaving the whistles virtually inedible.
Description/Taste
Garlic whistles produce a smooth, oval to round bulb ranging in color tones from red to gold and white growing on a green hallow stem . The whistles curl dramatically before becoming straight and erect, some cultivars growing to six feet tall. The bulbs release an abundance of pungent oil and robust peppery flavors when pressed.
Applications
Chop, blend, puree or roast. Great for flavor infusion recipes. Garlic whistles are ideal for pickling too.
Geography/History
All garlic cultivars are considered to be derived from ten specific varieties of garlic that evolved in the Caucasus Mountains between the Black Sea and the Caspian Sea. Garlic has been altered over time by natural and intentional selection, ever changing growing conditions, such as soil fertility, rainfall, temperature, altitude, length and severity of winter and as trade routes were evolved and extended garlic would become naturalized in often unnatural climates.
