Description/Taste
A recently developed vegetable, Endigia is a new variety of forced red chicory. Producing magenta colored leaves, there is almost a mother-of-pearl visual appearance on its inner surface. Offering a fresh crunchy consistency, this chicory's flavor is a delicious blend of a slight bitterness in the red areas and a refreshing sweetness in the crisp white flesh making it a perfect match between the bitter and the sweet.

Applications
Easy to prepare, attractive Endigia chicory adds lovely color and great taste to mixed green salads. Use as an attractive bed for appetizers. It may be cooked, but will lose its grand luster and super eye appeal. To store, refrigerate in a perforated plastic bag.
Geography/History
Endigia is a successful cross between traditional witloof white endive and two red broad-leaved chicories, Verona chicory and Chioggia chicory. It has taken many years of "classic" plant breeding by a French government institute to finally make this vegetable available. Flourishing in Rio Vista, California, on the Sacramento River, just forty-five minutes south of Sacramento, Endigia is grown by California Vegetable Specialties. Contracted by the French Government, California Vegetable Specialties is the only American company producing Endigia and is the exclusive grower and marketer of this very special chicory.
