Elstar apples are on the small to medium size and are mostly round. It has tough yellow skin with an orange-red marbled or striped effect on top. As a variety meant to improve on the Golden Delicious, it is more complex and sharp in flavor rather than overwhelmingly sweet. It is both honey-sweet and acidic, along with somewhat crisp and juicy. The flesh is creamy white or yellow in color. The tree begins bearing fruit when still young, producing every other year.
Elstar apples are available late in the apple season, late fall to mid-winter.
Elstar is a popular European apple variety (Malus domestica). This apple is a cross between the Golden Delicious and the Ingrid Marie, and also claims Cox's Orange Pippin ancestry. The Elstar has been compared to the Jonagold. Red Elstar differs from the main variety in its enhanced red coloring.
Apples are mostly made up of water, but contain essential nutrients such as Vitamin C, dietary fiber, and Vitamin K.
Although it can be used for baking, Elstars are best when eaten fresh. They also make delicious applesauce. They do not keep as long as some varieties, but can be stored in the refrigerator for one to two months. However, Elstars lose some of their tartness with age, and are sweeter after a few weeks in storage.
Elstar is much more well-known and liked in Europe than in the United States, and is a common variety in many European countries.
This variety was first bred in Wageningen, Netherlands around 1955, and introduced to the United States in 1972. They are not usually grown in the U.S.
