
White Corn
White corn is a sweet corn variety. Its ears are wrapped in tightly layered pale lime green to white husks. One ear of corn can contain up to 400 kernels growing in rows lengthwise.
Rainbow Swiss Chard
Rainbow chard, also known a 5-color silverbeet, is a tender chard variety with multi-colored stalks of yellow, white, orange pink and red.
Available year round, choi sum is most plentiful late fall through spring.
Current Facts
Choi sum, AKA choy sum and yu choy, is an annual plant and the most delicate member of the the bok choy family, Chinensis. Chinensis varieties do not form heads, rather they grow leafy blades much like celery and mustard. Although choi sum is a member of the bok choy family, its appearance resembles broccoli rabe and mustard greens.
Description/Taste
Although individual choi sum plants can vary greatly in appearance (ie; height and coloring) they have a common thread; they are characterised by their yellow flowering shoots produced from their fleshy stalks. Choi sum's stalks range from white to pale and deep green. Leaves are similar in color, are oval-shaped and vary in size. Choi sum has a mild flavor similar to young broccoli. Its flowers are the most pungent part of the plant, emitting a mustard-like flavor.
Applications
Yu choy is similar to mustard green in taste, and is slightly bitter. For a simple preparation—stir-fry yu choy with a little oil, minced garlic, minced ginger, minced chilies, soy sauce and just a bit of Chinese dark vinegar.
Geography/History
Choi Sum is a cool season vegetable native to mainland China. Several distinct varieties are cultivated there, specifically selected based upon the number of days it takes each variety to mature. Far fewer varieties are grown in the West, however, based on demand and choi sum's minimal adaptability to climatic and soil conditions outside of China and Japan. Most successful varieties grown in North America are cultivated along the West coast from Vancouver, Canada to Central California.
