There are nearly 1000 varieties of wild, cultivated and naturally hybridized mint, but generally only 7 are used specifically for culinary purposes: chocolate, apple, spearmint, lemon, pineapple, peppermint and orange.
Description/Taste
As its name suggests, chocolate mint is a variety of mint that displays sensory nuances of chocolate in both fragrance and flavor. If given enough sun when growing, it also suggests its name with leaves and veins that are variegated with burgundy and green. The mint tops are the leaves of the plant that are used for culinary purposes.
Applications
Chocolate mint leaves make a beautiful and tasteful garnish for desserts, including ice cream, cakes and custards. Be careful not to cut with a knife or the leaves will bruise and turn near black.
Geography/History
Mentha piperta cv. is chocolate mint's botanical name and it is a hybrid variety of mint. Mint hybrids occur commonly each year and although species within Mentha have origins within Europe, Africa and Asia, they have been naturalized in temperate regions of North America and Australia.
