They are known as one of the four Fine Herbs along with tarragon, chervil and parsley. Chive flowers are a natural attractant to bees, which is why they are a preferred herb to plant in a productive garden in need of pollination.
Description/Taste
Chives are grown for both their leaves and their flowers. Their true green leaves are thin, grass-like and as they mature, they produce lavender-hued, bulbous flowers. Both the flowers and the leaves are mildly pungent and spicy with savory-sweet undertones.
Applications
Chives are mild and may be used as a garnish or a flavoring herb. Add to cream-based sauces, buerre blanc, soups and broths. Use minced chives to finish meat, poultry or seafood dishes. Pair with other fresh herbs, cheeses, mushrooms, root vegetables, citrus and squash. The color and slight onion flavor or chives may be used to lighten as well as enhance the flavors in a dish. Refrigerate to store, making sure chives are kept dry until ready to use.
