Current Facts
Cauliflower, botanical name Brassica oleracea var. botytis, belonging to the plant order Capparales, is a cool season biennial. Unlike broccoli, cauliflower does not ordinarily develop side shoots, hence it must be harvested properly and consistently before it matures. Once individual florets sprout, quality deteriorates rapidly.
Description/Taste
Cauliflower is made up of tightly bound clusters of florets that form a dense head, similar to that of broccoli. Resembling a classic tree in shape the clusters sprout from stems which are attached to a singular central white trunk. The stems and trunk are firm and tender and the florets have a dense yet soft and crumbly texture. Its flavor is mild with subtle cruciferous and nutty sweet nuances, a taste which is amplified when roasted. The entire cauliflower, its leaves, trunk, stems and florets are all edible.
Nutritional Value
Cauliflower is high in both fiber and vitamin C, with a half cup of florets providing nearly half of ones daily requirement for vitamin C. It also contains a fair amount of vitamin A, folate, calcium and potassium as well as selenium, which works with Vitamin C to boost the immune system. Cruciferous vegetables such as cauliflower are touted for their high levels of cancer-fighting phytochemicals know as glucosinolates.
Applications
Cauliflower can be eaten raw or prepared in several ways including, steamed, roasted, fried and pickled. To prevent cauliflower and other white-fleshed vegetables such as salsify and celeriac from turning brown before cooking, soak the cauliflower in milk and water with a dose of lemon juice. Cauliflower’s relatively mild flavor pairs well with strong spices such as cardamom, cumin, curry, saffron, garlic, onion, ginger, sea salt and pepper. Once boiled or steamed, it can be pureed in to a velvety texture appropriate for soups, side dishes and incorporated into sauces. Use within a few days of purchase for optimal freshness, texture and flavor.
Geography/History
Cauliflower is cultivated from seed. There are four main groups that it is classified under: Italian, Asian, Northern European and Western European. It has seen many transformations throughout the centuries. Its ancestor is the wild cabbage, originating in Asia Minor and having an appearance more like kale and collard greens.
