Mache has been cultivated in France since the 17th century, and in France it is known as doucette. It is also known as "lamb's lettuce" because its leaves resemble the size and shape of a lamb's tongue.

Description/Taste
Like radicchio, Castel Franco has a bitter flavor but it is much more mild. The heads are uniquely colored-- each butter-yellow leave is dotted with purple spots and reddish veins. Castel Franco is named after a Northern Italian town in the province of Treviso. Individual heads are rose or flower-shaped, with the leaves folding over each other.
Applications
Castel Franco raddichio is mild enough to be served raw and may be added to fresh green salads.
