Roselle may be used raw, dried or juiced. The fruit's tart flavor requires a sweetener of some kind, and it is successfully used like a cranberry in recipes for jam, jelly, chutney and even wine.

Brokali has the long, tender stems of broccoli and the curly leaves of kale. Its florets are smaller than those of conventional broccoli and its stems are less woody. The kale-like leaves are also smaller with deeply curled margins. It has a sweet and nutty flavor with the texture of baby broccoli. Brokali produces tiny yellow flowers from its florets that are also edible and have a sweet peppery note.

As the name implies, Brokali is a cross between broccoli and kale. The seeds are marketed under the name “Apollo” as a Calabrese broccoli and kale hybrid. It is a cool weather crop that continues to provide leafy side shoots all season long. The head and central flowering stalk are best harvested young.
