Description/Taste
Baby bok choy has 3"-4" inch long, green leaves with characteristic succulent white stems. The texture is tender and mild, with a sweeter flavor than mature bok choy.
Geography/History
Bok choy is native to China, originally confined to the Yangtze River Delta. Its name is derived from the Chinese name for "soup spoon" because of the shape of its leaves.
