Bogatyr garlic is a garlic defined by its size, color and flavor. Its bulb wrappers are thick and parchment-like, their coloring a combination of purple, violet and white. As you peel away the outer wrappers the purple coloring intensifies, becoming almost a solid mix of purple hues just surrounding the cloves. The peeled cloves are creamy white and dense. Bogatyr bulbs are small, but the cloves are quite plump. A single bulb will generally house only five to six cloves. Bogatyr garlic is known for its fiery heat with a long lasting bite. It is known as one of the hottest hardneck garlic varieties.

Bogatyr garlic is a hardneck variety of garlic botanically known as Allium sativum var. ophioscorodon. There are a handful of different types of hardneck varieties the main ones being: porcelain, purple stripe, marbled purple stripe, glazed purple stripe, asiatic, turban, creole and rocambole. Bogatyr garlic is a marbled purple stripe garlic. Marbled purple stripe garlics such as the Bogatyr are distinguished by their bold colors and elongated clove tips. They have fewer cloves per bulb than the standard garlic and most have a much hotter raw taste.
Like many garlic varieties Bogatyr garlic is known for its high allicin content. Allicin is responsible for the pungent aroma and flavor of garlic. In addition it is also being studied for its organosulfur compounds and their ability to prevent certain types of cancer and cardiovascular disease.
Bogatyr garlic is intensely assertive when raw, thus use sparingly in any raw preparation. Chopping coarsely, mincing and pureeing will release more of its oils providing an even sharper flavor than slicing or leaving it whole. Cooking Bogatyr garlic does mellow the heat, but it doesn't lose any of its true garlic essence. Many people feel purple varieties such as Bogatyr are best prepared roasted as doing so enhances its complex flavor profile. Pair Bogatyr garlic with rich ingredients and those that can readily absorb its flavor. Complimentary pairings include cream, olive oil, starchy pastas, grilled steak, roasted meats and seafood. Acidic fruits and vegetables are also enhanced by Bogatyr garlic's presence. Having superb storing qualities Bogatyr can keep up to ten months when stored in a cool dry place. Leaving its hardneck intact will also help prolong its shelf life.
Prior to the advent of modern pharmaceutical antibiotics and medicines garlic such as the Bogatyr were used to treat a slew of common health aliments. In Russia physicians commonly used it to treat respiratory track illnesses, so much so that it earned the nickname, Russian penicillin.
Like many varieties of garlic Bogatyr garlic’s point of origin is of the same region as its wild ancestors. It is native to Moscow, Russia with seeds making their way to the commercial marketplace via the Gatersleben Seed Bank in Germany. Like most hardneck varieties Bogatyr garlic thrives in cool to cold climates and is cultivated today throughout Europe and regions of North America that experience true, cold winters.
