Description/Taste
Eggplant varieties come in various shapes, sizes and colors ranging from 2 inch spherical orange varieties to more than 8 inch pear shaped purple varieties. The White Japanese Eggplant is one of the more unusual to find with a long, slender white form. Japanese varieties tend to be less moist and therefore hold their shape a bit better than their larger purple cousins. Japanese White Eggplants also have a thin skin and sweeter flavor. Look for eggplants with shiny skin and bright white color. As white eggplant varieties turn overripe, they tend to turn pale yellow and their skin dulls.
Nutritional Value
Eggplants generally have a low calorie count at about 30 calories a cup and are high in fiber, potassium, and folate. With the high skin to flesh ratio on the long cylindrical Japanese White eggplants, the phytonutrient content is slightly higher relative to other varieties.
Applications
Japanese White Eggplants are perfectly suited for grilling, sautéing, stir-frying and pickling. They are a favorite in southeast asian cuisines. These slender eggplants are extremely easy to slice and can be eaten with or without their tender skin. They lend themselves well to simple applications such as topping a pizza or adding to a mixed vegetable sandwich layered with various cheeses such as brie or mozzarella.
Geography/History
While the purple eggplant varieties are certainly more popular today, the first known varieties were actually white. They weren’t nearly as popular as they are today though, as the earliest varieties were far more bitter.
