Fingerling Russian Banana Potatoes

Applications
Close-grained and firm textured, the white eggplant holds its shape and rarely becomes mushy. Baby eggplants are often prepared whole, stuffed and baked, because of their small size. Remove the tops and inside of baby eggplant and fill with cooked rice and cheese, then bake until tender. Slice baby eggplant into rounds and layer with sliced tomato and basil, then bake into a casserole. Roast whole baby eggplant and serve with a mustard vinaigrette. Grill slices of baby eggplant, layer on bruschetta and top with pesto for an appetizer. Baby eggplant will keep one to two weeks in the refrigerator.

The male eggplant has a smooth round blossom end or base that produces a small round dot while the female's blossom end has a larger oval scar and is usually indented. Heirloom male eggplants have smaller seeds and are favored for this reason. The more mature the eggplant, the larger the seeds. Today's varieties, however, whether male or female, have been bred to contain smaller and fewer seeds.
