
Maui Onions
Two characteristics set the Maui onion apart from other yellow onions: the high sugar and high moisture content of its flesh.
White Corn
White corn is a sweet corn variety. Its ears are wrapped in tightly layered pale lime green to white husks. One ear of corn can contain up to 400 kernels growing in rows lengthwise.
Baby white choi sum is a delicate member of the bok choy family. Its name means tiny vegetable and it is primarily harvested for its leaves. However baby choi sum is entirely edible.
Description/Taste
Baby choi sum has several thick and succulent crunchy bright white slightly grooved stalks that join at the base of the plant. Deep green spoon-shaped leaves grow from each stalk. Both the leaves and stalks have a mellow flavor, much milder and sweet than most cabbage cultivars.
Nutritional Value
The leaves of the baby choi sum are exponentially rich in vitamins and minerals.
Applications
Baby choi sum has virtually identical culinary purposes as bok choy. It can be used as a salad green, a cooking green or a pickled vegetable. Its most often used in Asian cuisines and its delicate flavor allows it to absorb the bolder flavors of chiles, spices, garlic, ginger and citrus.
Geography/History
Choi Sum is an annual plant native to mainland China. Several distinct varieties are cultivated there, specifically selected based upon the number of days it takes each variety to mature. Far fewer varieties are grown in the West, however, based on demand and choi sum's minimal adaptability to climatic and soil conditions outside of China and Japan. Most successful varieties grown in North America are cultivated along the West coast from Vancouver, Canada to Central California.
