Chives, the smallest growing species of the onion family, Alliaceae, are a bulbous perennial garden herb grown for both culinary and ornamental purposes. They are known as one of the four Fine Herbs along with tarragon, chervil and parsley.
Description/Taste
Angel hair chives is a descriptive term given to the standard species of chives that are harvested at their most young and tender stage. They offer a sweeter and milder flavor profile and are much more tender and thus have a delicate shelf-life.
Applications
Angel hair chives are mild and may be used as a garnish or a flavoring herb. They are a more uniform and delicate size that standard chives, and as such are more often used as a visual garnish. Add to cream-based sauces, buerre blanc, soups and broths. Use minced chives to finish meat, poultry or seafood dishes. Pair with other fresh herbs, cheeses, mushrooms, root vegetables, citrus and squash. The color and slight onion flavor or chives may be used to lighten as well as enhance the flavors in a dish. Refrigerate to store, making sure chives are kept dry until ready to use.
Geography/History
Chives are native to both the New World and the Old World, specifically North America, Europe and Asia. They are the only Allium with Old and New world origins.
