Description/Taste
Green plantains have a very firm and starchy texture and offer a potato-like flavor. As plantains ripen, they develop a sweet taste and their color changes from green to yellow to black.

Geography/History
Botanically a member of the genus Musa, plantains are mostly sterile triploid hybrids between the species Musa acuminata (A genome) and Musa balbisiana (B genome). Believed to be native to India and Southern Asia, the Portuguese Franciscan friars are thought to have introduced plantains to parts of the Americas and to the Caribbean Islands, possible from Africa. Close relatives of bananas, plantains are longer, have much thicker skins and are usually cooked.
