Low in calories, bell peppers are sodium-free, fat-free, cholesterol-free and an excellent source of vitamin C. One medium bell pepper contains about 30 calories. Eating five daily servings of vegetables and fruits lowers the chances of cancer. A recent study found that nine or ten daily servings of vegetables and fruits, combined with three servings of low-fat dairy products, were effective in lowering blood pressure.
Applications
Nothing perks up a salad like thin long attractive slices of a sweet-flavored yellow pepper. Enhance the nonchalant taste of lettuce with delicious crunchy sweetness. Sturdy bell peppers are perfect for stuffing with a favorite rice or meat filling. Bake until heated through; top with favorite grated cheese. Ideal for a healthy snack and a refreshing change from junk food, cut into strips for healthy munching or simply eat like an apple. For peeled peppers, broil in the oven; turn frequently until skin is blackened and blistered. Let cool enough to handle; slip off skin. To store, place unwashed peppers in a plastic bag; refrigerate. Peppers keep up to five days. Peppers may be frozen but crispness will be lost.

Imported from Holland and sometimes shockingly expensive, money apparently is no object as the demand for this outstanding bell pepper is consistently high. A hardy variety and insect-free, Holland bell peppers are hothouse-grown in a controlled environment planted from seed. In the United States, California, Texas and Florida are major producers. Grown locally in California, Coachella and Oxnard produce a large volume of fresh bell peppers for the local marketplace.
