Description/Taste
Skinny and oblong, the size and shape of the fingerling potato influenced its descriptive name. Unique purple fingerlings have a characteristic purple rim which surrounds a white flesh. Rather dry and waxy, the texture is flour like and offers its very own distinct flavor.
Nutritional Value
High in complex carbohydrates, potatoes provide potassium, protein, iron, niacin, calcium, vitamin C, vitamin B-6 and dietary fiber. There are about 100 calories in one medium-sized potato.
Applications
You can add their unusual color and superb texture to casseroles, stews and soups. Their earthy flavor can be enhanced with dill, rosemary, parsley, nutmeg or basil. To prepare, wash thoroughly and no need to peel. To store, keep in a cool dry area.
Geography/History
Purple fingerlings, also known as purple Peruvian fingerlings, are an heirloom variety and are native to the Andes of South America. Some Spaniard communities called the potato "papa", the Peruvian word for "tuber."
