Even after artichokes are separated from their parent plant they are still living organs in which respiration processes predominate because their nutrient supply has been cut off. In scientific terms this is called 2nd order biotic activity. If they are stored in poor ventilation it may result in fermentation if CO2 levels and atmospheric oxygen supplies are inadequate, making artichokes vulnerable and temperamental.
Description/Taste
The meatily dense omaha artichoke can become rather rotund when it grows to maturity, up to six inches wide! It has a striking appearance, sporting sharply tapered red-and-green leaves. Although similar in color to the anzio, it is much rounder in shape. The omaha is also less bitter than many artichoke varieties.
Geography/History
Artichokes are of Mediterranean origins. They are a cool climate plant but they can be planted in the winter in warmer climates.
