Shimbashi Izakaya "Shim" means "New," and "bashi" means "Bridge" in Japanese. With the desire to provide San Diego with the best Japanese dining experience outside of Japan, we have named our restaurant Shimbashi, meaning "New Bridge."

Description/Taste
Vividly green, stringless and an old time favorite, the Blue Lake bean has a classic bean shape. Long and straight, this rather fancy bean has a velvety feel. Offering a sweet taste, its exceptional tender crisp texture is especially sought after by chefs.
Nutritional Value
Green beans provide carbohydrates, dietary fiber, protein, vitamin A, vitamin C, calcium, iron and potassium. Folate, a necessary nutrient for growth and especially during pregnancy, is available in green snap beans. Eating five daily servings of vegetables and fruits lowers the chances of cancer. A recent study found that eating nine or ten daily servings of vegetables and fruits, combined with three servings of low-fat dairy products, were effective in lowering blood pressure.

A favorite salad enjoyed in southern France is "salade Nicoise" which combines cooked green beans marinated in a mustard vinaigrette and tossed with slices of tiny new potatoes, flaked tuna, a handful of fresh basil and olives.
Geography/History
Believed by food historians to be one of the first foods enjoyed by man, beans are of the species Phaseolus vulgaris. Members of the large legume plant family, pods are produced that hold tasty edible beans that are usually kidney-shaped or oval. The name "bean" refers to the fruit, the pod and the seeds. Loving the summer season, Blue Lake bean plants grow fifteen to eighteen inches tall and produce five to seven inch long tasty tender stringless pods. In the United States, Florida is the leading producer of green beans followed in production by California and Georgia. New York, New Jersey, North Carolina and Virginia also contribute to the bean market. Some green beans are imported from Mexico. From seed to harvest, Blue Lake beans take about fifty-two to sixty-four days and continually produce on vigorous vines.
