Description/Taste
Wrapped in a pale and dull yellowish-brown skin with a slight blush, the typically misshapen Pink Pearl apple boasts its namesake's colored flesh. Revealing a pretty pink crisp interior, the flavor is sweetly-tart. Some fans say its taste is reminiscent to lemon custard with a raspberry finish, or visa versa.

Applications
Paired with fresh raspberries, a natural apple choice for making a gorgeous galette. Make apple crisp, crumbles and turnovers. To store, keep in the coldest part of the refrigerator.

Geography/History
In 1944, Pink Pearl heirloom apples were hybridized in Northern California crossed with an apple named Surprise, a red-fleshed rather sour variety. It is thought that this latter apple was derived from a century old variety of red-fleshed Turkish crab apples. Albert Etter is said to have developed Pink Pearl to create a sweeter tasting apple. Locally grown and located just east of Paso Robles, California, Windrose Farm specializes in Fruits, Roots, Beans and Greens. Fortunately finding fifty fertile acres in 1990 that soon would flourish with premium heirloom apples, garlic, onions, leeks, winter squash, potatoes, dry beans, greens and melons, by 1995 Windrose Farm's thriving crops were in full swing. This successful farm contributes a compatible climate for its outstanding produce. The region's microclimate, which is when there is a dramatic temperature swing of at least fifty degrees Fahrenheit that can occur within the same twenty-four hours and from season to season, is credited for Windrose Farm's superior heirloom apples, melons, carrots and many other of its beautiful and flavorful bounty.
