This long and oval French Heirloom tuber has a smooth and buttery texture with a subtle nutty flavor making the La Ratte a choice and seductive potato.
Applications
Although it is a fairly firm potato, save the fryer oil for a Russet and showcase the La Ratte with lower heat applications: saute, braise, boil. Great salad potato with a low starch content.

According to the European Cultivated Potato Database, the origin of the La Ratte is disputed (or agreed upon) to be Denmark or France.
