A relatively modern day vegetable, broccoli or calabrese is one of the most popular edibles of today's vegetables.

Description/Taste
Tender and sweet, baby sprouting calabrese broccoli produces short thin stems. This charming and unique broccoli variety is much smaller than common commercial broccoli. A totally different type of broccoli, sprouting calabrese broccoli never produces large heads and thick stems.

Nutritional Value
Broccoli is of the most nutritious of all vegetables and contains complex carbohydrates, protein, vitamin C, vitamin A, potassium, folic acid, calcium, iron and fiber. If that isn't enough, it has plenty of cancer-fighting properties. Not only loaded with antioxidants, such as beta carotene, folic acid and lutein, its high fiber helps to prevent cholesterol. Having anti-ulcer and antiviral properties, broccoli also helps regulate blood sugar and insulin. Three-fourths cup cooked or four ounces raw broccoli has about 33 calories.

Applications
A new favorite of chefs, this mini broccoli variety is just the right size to cook whole. Easy and convenient, it requires no major preparation and the stems are deliciously edible. Excellent sautéed, gently and briefly sauté in olive oil enhanced with onions, garlic or shallots. Be careful not to overcook. A little crunchy is best! Ideal side dish for savory entrées. Tasty edible and attractive garnish for grilled, sautéed or roasted meats. To store, refrigerate at 34 degrees Fahrenheit in a plastic bag. For optimum quality, use within seven to ten days.
