Of all the corn produced, less than one percent is consumed as fresh, frozen or canned. The majority is made into oil for cooking, syrup for soft drinks, fuel for automobiles and talcum powder. As a final salute to this very versatile vegetable, it's even an ingredient in embalming fluid.
Description/Taste
At milk stage, the kernels of this deliciously tender corn variety are a very pale white. White corn is especially sweet, so sweet and very, very tender.
Nutritional Value
Nutritious and delicious, one medium ear of white corn contains about 80 calories. A serving provides vitamin A, vitamin C, iron, potassium, protein, and dietary fiber. Corn also is claimed to have some antiviral and anticancer properties.
Applications
The less white corn is cooked, the better the flavor and texture. Bring a pot of water to a rolling boil; carefully add husked ears; cook or steam until desired tenderness. Steaming preserves flavor, but takes longer. Corn may be microwaved. On High, cook two ears about five minutes. To grill, the ears may be soaked in water in the husks to prevent burning, but will have a steamed taste rather than a grilled flavor. Cook directly on the grill without husks about three minutes on each side. Brush with melted butter while grilling over medium heat. Flavor with a spicy chili-flavored butter for a snappy change of pace. Corn loves the company of black beans, red onions, scallions, basil, cilantro and tomatoes. Make tasty tamales tortillas and succulent succotash. Scrape cooked kernels from the cob into a pot of hot soup for extra flavor and texture. Corn is best used immediately after purchase as its sugar content rapidly turns to starch. To store, refrigerate in its natural husk. For optimum flavor, do not store longer than a day or two.

Geography/History
Early cuisine was actually created around corn. Researchers claim at least forty-eight varieties of corn were developed by the Incas. Sweet corn is actually divided into white, yellow or bicolor corn. More than a food, corn was at one time considered sacred. The Inca calendar was actually based on the life cycle of the corn crop. Even the maize god was the center of the pantheon of Mayan deities. Today across the South, white corn varieties are preferred.
