Description/Taste
French fingerling potatoes understandably acquired their descriptive name due to their oblong and skinny shape. Rather dry and flour like, this potato variety offers quality and a delicious nutty flavor. Wrapped in a pinkish-red skin, the moist yellow flesh also has streaks of pink. Fingerlings measure between two and four inches in size.
Nutritional Value
French Fingerlings contain calcium, niacin, protein, iron, potassium, vitamin C, vitamin B-6 and dietary fiber. One medium-sized potato contains about 100 calories. For optimum nutritional benefits, cook with skins or lightly peel as most of its nutrients are just under its skin.
Applications
For a tasty appetizer, roast tomatoes, onions, garlic and one small hot pepper; puree all together with a tad of olive oil and serve with golden brown potato fingers. Complementary herbs include parsley, rosemary, basil, nutmeg and dill. To prepare, wash thoroughly. To store, keep in a dry, cool place.
Geography/History
In the sixteenth century, when Spanish conquistadors came across the potato while searching for gold in Peru, they first thought this potato to be a type of truffle. Taking it home with them to Spain, potatoes were used as an inexpensive food for hungry sailors. Gonzalo Jimenez de Quesada, a Spanish explorer, is credited with the first European introduction of the potato in 1556.
