Flageolet beans are a summer bush bean variety that hit the California market around the beginning of July and peak through August.

Description/Taste
Produced in an inedible pod, light green colored Flageolet beans are small and kidney shaped. Creamy and firm in texture, these beans, unlike other shelling beans do not typically require soaking. Flageolet beans are also known to show up in other colors including yellow, black, red and white. They are best harvested when still young to preserve their tender texture.
