Description/Taste
A grower's favorite, flavor-packed Red Thumb fingerling potatoes are sweeter than Russian Banana potatoes and measure about two and one-half inches long and one inch in diameter. A pretty little smooth-eyed potato boasting bright red tender skin and pink flesh, it isn't as starchy as some potato varieties. Fingerlings are generally classified as waxy and either moist or dry fleshed. The Red Thumb fingerling's potato personality is somewhere in the middle.

Applications
Deliciously rich in texture, Red Thumb fingerlings are excellent roasted. Sauté slices or chunks in olive oil with garlic or shallots; serve as a side dish. Great choice for making crispy chips.
