A rather large apple, aromatic and varying in color, Northern Spy apples typically sport a yellow skin with striking red to scarlet colored highlights. The crisp and tender white flesh is wonderfully juicy and sweet. Gorgeous!
Applications
A great dessert apple, this remarkable beauty is ideal for pies, cobblers, crumbles, sauce, apple crisp and cider. Its excellent texture holds up well to cooking. Slices make colorful and delicious garnish. Apple fans love this one! To store, refrigerate in coldest part of refrigerator. A good keeper.
Geography/History
Locally grown and located just east of Paso Robles, California, Windrose Farm specializes in Fruits, Roots, Beans and Greens. Fortunately finding fifty fertile acres in 1990 that would soon flourish with premium heirloom apples, winter squash, melons, potatoes, garlic, onions, leeks, dry beans and greens, by 1995 Windrose Farm's thriving crops were in full swing. This successful farm contributes a compatible climate for its outstanding produce. The region's microclimate, which is when there is a dramatic temperature swing of at least fifty degrees Fahrenheit that can occur within the same twenty-four hours and from season to season, is credited for Windrose Farm's superior heirloom apples, melons, carrots and many other of its beautiful and flavorful bounty. Specialty Produce adamantly endorses and strongly supports our local growers, farmers, ranchers and the California farming industry. This absolutely beautiful apple variety was discovered growing in an East Bloomfield, New York, orchard. According to its history, the seedlings were taken to New York from Connecticut around 1800. Other names include Northern Pie Apple, Red Spy and Red Northern Spy apple. The slow-to bear- fruit trees, sometimes taking ten years, are quite hardy and produce dense foliage. The attractive leaves are shiny and have a slightly waved appearance. This rather fragile apple requires careful handling when harvested. However, if the grower controls the size of the apple trees, fruit may appear in three to four years. Considered one of the best apples to store, Northern Spy apples ripen in late September or early October.
