Description/Taste
Similar in appearance to cranberry beans, Persian shelling beans sport pretty pink streaks which occur during the last stages of growing. The bean is white until ten days before harvest and is kept on the vine in order for the characteristic red and white swirls to develop. Even when the bean appears to have reached its full size, Persian shelling beans are not harvested until the color is assured to be present. Smaller than cranberry beans, the flavor of this bean variety is much richer.
