Description/Taste
Almost too pretty to eat, Zephyr squash sports a two-tone colorful tender skin and a mild flavored matching creamy and sweet flesh. Never bitter, ideal squash for fresh eating or cooking. Sometimes gorgeous green on the top and bottom with sunny yellow in the middle, this squash cutie can also make its tasty debut simply half green and half yellow. Available in its baby stage, these little squash sensations measure just three to four inches in length. This scrumptious squash's stunning flower is vibrant yellow. Voted the most popular squash by chefs for its wonderful texture, delectable taste and colorful presentation.

Applications
Tender and tasty, this special squash is ideal for healthy menus. Gently sauté in non-fat spray or olive oil until just heated through to maintain texture. Sprinkle with fresh herbs and seasonings to taste. If and when no one is looking, drizzle with a tad of melted butter. Cut vertically to showcase its striking colorful interior. Serve as vegetable garnish for main entrées. Toss in stir fries the last minute or two of cooking time. Delicious with chicken dishes. Perfect choice for tempura specialties at sushi bars. To store, refrigerate in a plastic bag.
