Description/Taste
Versatile and marvelously sweet Cavaillon melons may be enjoyed raw or cooked. Whether served naturally sweet or seasoned with fresh herbs and spices, this fragrant melon's great taste deliciously satisfies. High in sugar content, ripe Cavaillon melons turn lovely lime green. Another tell-tale sign this melon is ready to delectably devour is when its stem begins to crack and pulls off easily. When overripe, this melon turns yellow and its characteristic furrowed lines on the rind disappear.

Applications
Ideal breakfast treat. Excellent edible garnish for a myriad of culinary delights. Main entrée sandwiches especially love its refreshing taste and pretty presence. Sauté slices in butter and olive oil; accent with a splash of balsamic vinegar; serve with slices of wild boar ham. Stuff monkfish with bite size cubes of melon; cooked briefly; drizzle with favorite bold flavored sauce. Chefs often serve melon chunks wrapped in prosciutto, the Italian name for ham. This lovely French melon may be served hot, cold or boldly spiced. Great for melon soup specialties. Perfect melon choice for appetizer fruit plates, iced beverages and upscale tropical cocktails. Pairs deliciously with ice cream, sorbet, gelato, cottage cheese or yogurt. To store, keep refrigerated after cutting. Fully ripe whole melons may be stored in the refrigerator for one week.

Cavaillon, France, is regarded as the Provencal capital of the European cantaloupe, and for which the famed "melon de Cavaillon" is named. A tourist must is seeing the larger than life concrete statue of a melon, the renowned home of the Cavaillon melon. From early spring through late summer, Cavaillon melons are available in fresh produce markets in Provence, France. The French love this choice melon served with port wine.
